Prepping: ~Gardening~ Getting In The Habit Of Growing A Few Of The Veggies We Love

As we pick, chop, and place some freshly grown green bell peppers into a few freezer baggies to go into the deep freezer, I think about how we love them in our meatloaf, hamburgers, or spaghetti, or anything that calls for green bell peppers. And each time we make ourselves a lunch meat turkey sandwich with a few pieces of leafy lettuce and sliced tomato added to it or when we want to create a delicious fresh salad, I am so glad we didn’t have to buy these veggies from the grocery store. Then there’s the kale that we grow so we can add it into our weekend smoothies or steam them as a veggie side dish. We purchase lots of those nutritional protein and super greens powders and blend with some fresh fruit along with the kale we grow and I can tell you that we find these smoothies are so good for me and my husband as we feel we are treating ourselves very well by doing all of this. And another simple thing we also like is to regrow in the kitchen window sill some kitchen scraps from the veggies we’ve had to purchase from the grocery store, like celery, scallions, ginger and onions to recreate a growing harvest. Now, this all feels so amazing! I just love that we can feed ourselves by supplying at least some of our very own fresh foods and so doing this makes gardening a special and vital part of our prepping and preparedness plans.

Now someone might say that’s not such a big deal and you’re only growing maybe four or five things, but out of just the green bell peppers, leafy lettuce, tiny red tomatoes, yellow squash, and kale we find it makes a huge difference because these are some of the main vegetables we love and like to eat the most plus we get to save at minimum fifteen bucks a week off our grocery bill. Also, we like having the convenience of just walking a few feet into the next room to pick what we need during the winter months or walking out into the back yard to pick what we want in the summer months. Plus a lot can really grow at a time that we wind up having a huge bounty and so we get to share some of our veggies with my neighbor too. It almost feels like we are getting free food! LOL!

This past summer we grew yellow squash and they were so pretty and bright in color and so we cut them up and put them in freezer bags to go into the freezer to save so we can have them during the winter months to go in our simple homemade chicken noodle soup, turkey chili, and beef stew.

So yes, I am always amazed whenever I see something we plant suddenly grow up so bright, colorful, pretty and delicious that requires almost very little effort and care once planted. So even though we don’t get to grow a wide variety of many things, just a few like these will do us just fine.

  1. Anyone who looks down at gardening knows not its joys! It is simply amazing to eat homegrown vegetables or watch your garden bloom!
