Ever since I learned that the cold cereal’s sold in stores was not good for you, in fact, they were poisonous I decided to come up with my own recipe. And oh boy does this cereal taste so much better than store brought cereals. The flavor and chewy texture are unlike any other cereal I have ever enjoyed and tasted in my life! I am hooked and cannot go back. I love to have my homemade cereal sometimes with ice-cold organic horizon milk, or some kind of homemade nut milk and sliced banana or without milk as a plain crunchy snack or sometimes I’ll go as far as to make a few cereal bars with this cereal by mixing in a few melted vegan marshmallows and caramel sauce. And the wonderful thing is that these types of grains are so very good for health.
My Favorite Homemade Cold Cereal Recipe
3-4 cups of Rolled Kamut
3 cups of Rolled Spelt
½ to 1 cup of melted creamy butter (or a light olive oil if you don’t like butter)
1 cup of Agave syrup (or add more if you like it to be sweeter)
2 Tablespoons of Vanilla Powder (the powder gives it a more powerful flavor than the extract)
1/2 teaspoon of nutmeg
2-3 teaspoons of pumpkin spice
½ teaspoon of cinnamon
1 teaspoon of Himalayan salt
2 cups of raisins, soaked in water till plump then strained
1 cup of pumpkin seeds (removed from shells)
1 large cookie sheet
1 large spoon
1 medium mixing bowl
1 small bowl for the raisins to soak
1. Mix all the ingredients together except for the raisins for now and spread out the mixture evenly on a large cookie sheet and bake in the oven uncovered for 1 hour at 200 degrees.
2. Take the mixture out of the oven and move around the mixture with a spoon and add the soaked and strained raisins and re-spread out evenly then sprinkle over the top with a bit of pumpkin spice and cook for another 2 hours at 200 degrees.
3. Remove from oven and store in an airtight container in the fridge to have with milk or plain as a snack.
