This week I had a serious need for some beef.
We haven’t had beef stew in such a long time that I cannot remember when we last had it.
I even forgot how to make it! (lol!) that’s how long its been….. but I just went ahead and simply threw this together.
It was delicious and my husband loved the meal. So I think I’ll try it again someday.
Easy Peasy Beef Stew with Egg Noodles Recipe
4-6 pound package of Beef Stew Meat
2-3 cups of frozen mixed vegetables
2-3 Tablespoons of Braggs Liquid Aminos or soy sause
2 Tablespoons of white flour
2 Tablespoons of corn starch
1 or 2 cans of condensed mushroom soup (optional)
seasonings (1 Tablespoon Garlic powder, 2 Tablespoons of Italian seasoning, 1 teaspoon black pepper, 1 Tablespoon sea salt)
1 medium onion (peeled and leave in crock whole)
1/2 cup celery (sliced)
5 cups of large egg noodles
5 cups of water
water (enough to cover the meat)
1/4 cup chilled iced cold water
Large to medium sized crock pot
Directions: (be prepared to consistently add in and attend to after the 4th hour)
Cooks in 8 hours:
First: Rinse beef chunks in cold running water, shake off water and place beef in bottom of crock pot then add enough water to cover the meat. Add seasonings, liquid aminos (or soy sause) and the whole onion. Let crock cook on high heat for first 4 hours.
2nd. On 3 rd hour shake in the flour, stir and let continue to cook.
3rd. On 4th hour (midway) add in frozen mixed vegetables. Let continue to cook on low heat.
4th. At 6th or 7th hour add in and lay spoonfuls/lumps of mushroom soup (do not stir or mix in) cover and let continue to cook till well done.
5th. Finally, remove the whole onion from pot and mix corn starch in a ¼ cup of iced cold water then gradually pour the liquid corn starch into the crock while stirring at same time. Let it continue to cook for another 15 more minutes or so. Then turn crock to keep warm dial.
Prepare Egg Noodles:
Next add egg noodles into a pot of salted boiling water, turn off heat and add cover to pot. Let egg noodles sit in pot of boiling water for 5 minutes then strain off water.
Get Ready For Supper!
Next serve on plate the noodles first, then top noodles with beef stew meat chunks and vegetables with lots of gravy. Have a simple side salad with meal and some iced tea. Ah yes now that’s something delicious!
