As promised here’s the other part of the recipe for the Breakfast Bake Casserole.
Onion Home Fried Potatoes Recipe
2-1/2 pounds of white Potatoes (peeled and thickly sliced french fries)
½ cup of Yellow Onions (chopped)
1-1/2 teaspoon of Black or White Pepper
1 Tablespoon of Sea Salt
1 cup Olive Oil (and be sure to preserve oil for later use) or Ghee
1 Medium Skillet for frying
Pour oil in skillet, pour in potatoes, onions, sprinkle salt and pepper to fry on medium heat. Turning fries with a spatular a couple of times till the majority are golden browned. Do not cook fully if adding to the Breakfast Bake Casserole, just cook till half done. Remove from skillet and preserve remaining oil in a bowl for later use.
