I cannot wait for the okra (lady fingers) growing in our back yard this summer and I will try this recipe most definately. Yum yum.
Recipe Adapted from Mama’s Thoughts in Her Pots
Okra, commonly known as ladies fingers or bhindi a hot favorite of mine.
- Classified among the very low-calorie vegetables, it contains a high source of fiber, minerals and vitamins.
- Contains good amounts of Vitamin A and anti-oxidants. It is one of the green vegetables with highest levels of anti-oxidants and controls cholesterol.
- The pods also contain good amounts of vitamin K. Vitamin K is a co-factor for blood clotting enzymes and is required for strengthening of bones and also a good source of many important minerals such as iron, calcium, manganese and magnesium.
Believe me, cooking okra with all these wonderful spices adds a fantastic flavor to this amazing vegetable.
